Marks of quality
The "Appellation d'Origine Contrôlée" is a guarantee and recognition, verified by the French State, that certain high quality products are linked to a particular territory. Among dairy products, only a limited number of cheeses, butters and creams are up to this appellation; here, Roquefort Cheese is the oldest A.O.C. It comes under the category of veined curd cheeses.
The confederation of producers of sheep’s milk and of Industrial Makers Roquefort Cheese stands guarantee, via this label, to its conformity with all the A.O.C criteria; it represents the higher authority of the profession, exercises quality control, selects the dairy herds and participates in the promotion of Roquefort.
In organic pastures, the animals have access to sufficient space and outside areas. They are fed organic feeds, mostly grown in the
grounds. If necessary, priority is given to gentle medicines. The AB logo guarantees that a product contains at least 95% of ingredients from organic farming.

Extremely strict inspections are carried out by the French Ministry of Agriculture, Food and Fisheries.
